Introduction: Tout Est Bon Dans La Carotte (Everything's Good in the Carrot)

About: Taking a break in my studies, I'm in Belfast for one year as a volunteer in Belfast Fablab. I will share with you my projects and hope you will be able to use it or be inspired of. :D

With organic vegetables you don't have to be careful about the skin or the leaves of a product which could contain a lot of pesticides and chemical fertilizers. With this recipe I wanted to use every parts of the carrot in one tasty and easy meal.

So these are some CARROT CROQUETTES WITH A PESTO OF CARROT LEAVES.

( I am sorry for my english it is not my maternal language ;D )

You will need for:

PESTO

·THE LEAVES OF TWO CARROTS (around 40g)

·70g OF OLIVE OIL ·25g OF SEEDS/NUTS (of your choice. For this recipe I took a mix of different seeds (sesame, sunflower, flaxseed...)

·1 GARLIC CLOVE

·PARMESAN ( I didn't use it but if you want a taste that is closer to the original pesto recipe feel free to add some)

CARROT CROQUETTES

·2 CARROTS

·1 SPRING ONION

·1 EGG

·1.5 TABLESPOON OF FLOUR

·CURRY POWDER

·SALT AND PEPPER

·OLIVE OIL

Step 1: PESTO_PREPARE THE INGREDIENTS

·Cut the leaves of the carrot and wash them to remove the dirt.

·Put the leaves, the seeds and the garlic (and parmesan) in the blender.

Step 2: PESTO_MIX ALL THE INGREDIENTS

·While you add the olive oil little by little, blend all the ingredient until you have a smooth pesto.

·Put the pesto in a bowl and keep it in the fridge.

Step 3: CROQUETTE_PREPARE THE VEGETABLES

·Wash the carrots ( don't need to peel them if they are organic)

·Grate the carrots

·Cut the spring onion in little pieces

·Brown the vegetables in a pan with some oil and the curry powder until it's melting.

·Keep it in a bowl.

Step 4: CROQUETTES_PREPARE THE BATTER

·In the bowl, add the egg, the flour, some salt and pepper and mix everything together.

Step 5: CROQUETTES_SHAPE THE CROQUETTES

·Shape the croquettes with two tablespoons on a baking tray. With these proportions you can do around 12 croquettes.

·Pour some olive oil on the croquettes and put it in the oven at 200ºc during 30min ( a little bit more if it's not browned )

Step 6: SERVE THE MEAL

·Serve the croquettes with a little salad, and the pesto.

·Enjoy it while it's lukewarm!
