You need a high fat content - so go for the cream with the highest fat content you can find in the fresh dairy section of your supermarket or food store. If you can get cream from Jersey or Guernsey type cows that would be ideal.

Best would be to get some raw, untreated milk and skim it.

Put an ad on Craigslist, or a similar site, asking for home-produced cow or goat milk. People frequently have extra and are willing to share/barter for it.

Homogenized heavy cream *will* work, my wife has used it. She likes making butter. Unfortunately we can't get non-homogenized cream. My understanding is that the homogenized cream will take longer (and it does take a little while). Buy a quart of cream and try a cup or so first to see how long it takes. If you can't get it to 'go' by hand, try a stand mixer. Good luck!

Non-homogenised, heavy cream. If its homogenised the butter fat won't separate out.

Heavy Whipping cream should be good.
