How do I make beef jerky in the oven using ground beef ? Answered

I want to make the beef jerky briefs however I don't have a dehydrator so I need directions for dehydrating the ground beef in the oven.

When I used to go hunting regularly, we would make jerky from ground venison or elk to carry along with us. If we didn't have enough meat, I would go to the supermarket and buy a large chuck or rump roast and have the butcher trim away as much of the fat as possible and then grind it up. You need at least 90% lean or it will fall apart.
Add your spices and seasoning and mix well with your hands, put it in the refrigerator and let it chill for a couple of hours. Take it out and place a large ball of meat between two sheets of parchment paper or waxed paper and use a rolling pin to roll it out to about 1/4 inch thick, peel away the top sheet of paper and cut into uniform portions. A pizza cutter works best but a regular kitchen knife will do.
Place the pieces on a wire mesh rack like the one described by LMB. Put it in the oven pre-heated to 185 degrees and let it dry for 1 to 2 hours (check on it every 15 minutes after the first 45 minutes or so to see how its doing) and then remove from the oven to cool.

3 pounds extra lean ground meat
2 teaspoons kosher salt
2 teaspoons black pepper
2 teaspoons garlic powder
2 teaspoons onion powder
1/2 teaspoon cayenne pepper

I've seen squares of wire mesh sold for making Jerky in an oven using ground meats. I think I saw them in a brochure that came with a package of High Mountain brand jerky spice. You would dispense the ground beef and spice mixture onto the sheets, similar to what you would do with a dehydrator. I don't have any idea what they would cost.

Beef Jerky can be made in an oven, but its NOT usually made with ground beef... you want to use something like a beef round steak. Trim the fat from the meat and cut it into thin strips. Marinate with soy sauce, worcestershire sauce and spices overnight. Then drain the marinade and place strips on a foil lined baking sheet with some space between the pieces. Bake at 200F for 6-8 hours until meat is dry. (Time depends on how thick the strips are). Remove from oven and cool.
