Hummus dip served with thinly sliced vegetables and gluten free crackers?
Split pea soup seasoned with lemon, onion and cloves or vegetable-lentil stew? Fruit salad?

In my opinion, when a person has a severe or restrictive diet regime, it's perfectly ok. to ask them for ideas and favourite recipes. My grandson has dietry restrictions and my daughter often offers help or advice when he's eating elswhere. Most people would rather accept help than make a mistake. Good Luck with this.

Sea bass (or trout) baked in salt with boiled potatoes and a light vinaigrette.

Relatively easy to make and tends to look very good.

OK, you want to avoid dairy, cereals and animal-flesh.
How about a chilli which uses a mix of different beans (no meat). Don't serve with cheese, but fresh herb perhaps? Rice or potato.
