I learned how to build Larger contraptions like what you posted by using a game called Garry's Mod. (Look it up on youtube) You can build anything from structural contraptions, automation, and even some complex robotic rovers !

In the Uk your could study Robotics as a discrete subject.
Computer science
Electronics
Electrical engineering
Mechanical engineering
Computer programming
Control technology
manufacturing technology.
Robotics has elements of all of these.
Above all you have to make yourself attractive to a potential employer:
1. Make a list of manufacturers
2. Do something NOW in this line. Start to not just learn with simple robots but start building them as well.
3. The wider your skill set the more likely you will be employed.

Integrated Electronics is a MUST (Combo of Electronics and Computer Programing ,Punch Arduino into Google)
After that I'd suggest a focus on Mechanical Eng. Most colleges and Universities will usually offer a specific Program.
Or you can do what I did and Disassemble any piece of Mechanicle or Electronic Equipment you can get your hands on ! lmao

Doesn't hurt if you build increasingly more complex robotic kits.
Lego and Fisher make superb robotic elements with software programming experiences.
That UK boat transport was solved by an engineer using Lego
